I test my solder, there is no short circuit between positive and signal and negative pins.
between positif and negative I mesure 149 ohms on the gt2560 board
I take a picture and I give you that

I try something maybe we found it !

I remove a support in plastic, a small white part where we fix all endstop swith because the 3d sensor two wires are not enough push in the support on the board maybe this create a false contact.
because now I have this when I do M119;

21:15:05.298 : Reporting endstop status
21:15:05.298 : x_min: open
21:15:05.298 : y_min: open
21:15:05.298 : z_min: open

I test with

Send M280 P0 S10 (it will push the pin down, led should be off, do not touch it)
Send M119

I have this result, I confirm led is off and pin is down

21:20:49.952 : Reporting endstop status
21:20:49.952 : x_min: TRIGGERED
21:20:49.952 : y_min: open
21:20:49.952 : z_min: open

Your soldering looks good!
You could solder the wires to the Z min pins too (front or back of board), then you will have good connection.

I have only X who return propely to home.
Z axis hit the end of the printer and Y stop before y endstop is trigger !?

It hit y min sorry ...in fact it it because the end stop is replace by 3d touch sensor "black and white wire"

I just send G28 and all axis seems want to go home but Y axis hit the printer so I push the urgence button..
