Suspecting it, I unfortunately already did.
But this thing still happens. I wonder is it doesn't come from the bed, but I don't really see what...

if you are lucky that you were using CURA as the slicer, then check the temperature settings.
it is known to hold the prints.
set all temp the same....

Yes, I thought about that and did all the recent prints without changes in the temperature (both for the bed or nozzle). As for the fan, I leave now a constant setting.
This is not that.
Just made a print and, again it did pause (but not at start, it did print for around half a hour before to pause).
I was watching the control on Octoprint and saw the pause instantly, so I was able to set back the temp from Octoprint (pausing instantly shut down the heating for the bed and the nozzle), then to resume the print which restarted.
Still, it's really weird.
Found many posts about similar behavior. None gives a solution (or if the OP found, they did not come back to share).
Will continue to investigate obviously, but it's really boring...
