I also always adjust the bed (z=0) before starting a new print so that the paper rubs between the bed and the nozzle. But I can see that the paper does not pass between the nozzle and the bed each time that I start a new print.
Does this mean that the table is moving during the printing or is it normal ?
One other thing regarding this. Make sure that you are leveling the print bed while the bed and extruder nozzle are hot and set to the print temperature. If you level the bed while both are cold, and then you start to print, both the bed and nozzle heat up and expand and close the gap that you had set. This is why you can move the paper while leveling but when it starts to print you can't move the paper. I think you should be able to do several prints without having to re-level the bed. At least I am able to.
